I am on the lisa lesson of the Am/E chords, so the Am has 2 fretted strings, according to the lesson, but I went to the Tool/Chord charts and Am shows 3 fretted strings... why is there a discrepancy?

You're correct. As per the chord chart conventional open Am ordinarily uses three fingered strings.
But, as Lisa explains in and the lesson title implies, the lesson uses simplified versions of the chords to get the very beginner playing and positively encouraged by their achievement at being able to play those simpler chords.
You'll move on to play both chords per the chord chart in later lessons.

OK, I figured, I was just trying to find something I could print of what I have learned so far... btw, it is hard to type due to sore fingers, that is a good thing right? lol

I'm indifferent. I find now they're seldom if ever "sore" per se, but a little tender/sensitive as expected if I give it a hammering at any session or multiple sessions as I was yesterday.
Thank you for all of your help and the warm welcome on my introduction post, :D
