You're correct. As per the chord chart conventional open Am ordinarily uses three fingered strings.

But, as Lisa explains in and the lesson title implies, the lesson uses [u]simplified[/u] versions of the chords to get the very beginner playing and positively encouraged by their achievement at being able to play those simpler chords.

You'll move on to play both chords per the chord chart in later lessons.
